Like you, I will be roasting squash all winter long. But every once in a while, I like to change it up a little…and cook my winter squash in a pan instead. Delicata squash is perfect for this because it slices easily into rings, and the edible rind makes the dish both easy and attractive.Delicata Squash Rings: Slice a delicata squash into 1/3″ rings and use a spoon or paring knife to scoop the seeds from the center of each ring. Pour 1-2 Tbsp. olive oil into a pan and cook squash over medium heat until golden, then flip and cook the second side. Top with an herb pesto or oil.
Those rings look really delicious :)
Wow! What a fabulous idea…they look gorgeous. Thanks!
Simple. Beautiful. Delicious.
My absolute favorite squash! I just photographed a post about this (but in the oven). Great minds think alike :)
I love it. Beautiful presentation and I bet they tasted excellent.
Best,
Conor
Emmy, I’ve never bought delicata squash, Since i love every other type, I’m sure this one is incredible, I’ve got to try it!
Looks so pretty! Simple elegant delicious – sign me up :)
These really are very attractive! I am very intrigued,
Emmy–we made these little lovelies for dinner last night. They were delicious! Winter squash and pesto is one of my favorite combinations–a nice change of speed from the usual sage.
