Ok, so I’ll give you that this is more of a tip than a recipe. But I promise you this: a salty, garlicky, spicy plate of pasta is even better with a fried egg on top.

I LOVE friend eggs, I used to work in an indonesian restaurant and a number of their dishes had a fried egg on top. I love it esp if the yolk is wee bit runny!! c
Oh that is really funny i wrote friend instead of fried! Ah well!!! c
That’s a great idea! I do love doing this – it’s a ready made sauce :D
I honestly never thought of doing this, what a great idea. YUM!
Is that really all the sauce that’s on that pasta? Looks almost like carbonara. Come to think of it. Add ham and you are there! Great idea.
The pasta sauce (under the egg, which of course adds a sauce of its own) is olive oil, garlic, red pepper flakes, anchovies, breadcrumbs. I should get that recipe up here!
YES! I am all about fried eggs on everything! Pizza, pasta, anything!
Ohhhh what a goooood idea. Fantastic!
Okay, now I’m in heaven. So glad I found your blog, Emmy! :)
I’m so glad too! Although as for swapping recipes, I might have to work up the nerve to make your amazing chocolate cake: http://cauldronsandcupcakes.com/2012/02/06/celebration-chocolate-mudcake-recipe/ :)

I love this! I basted my egg and put it on top of my simple spaghetti when I got home after a really long day last week and it was DELICIOUS! Thanks for suggesting this because even though I make carbonara pretty regularly, I never would have thought of this!
So glad you liked it! It is definitely in the “always add more butter” category of cooking–decadent and delicious. :)
